If you're anything like me........

If you're anything like me and you are desperately trying to sneak more veggies in your diet, I have a recipe for you. Now, keep in mind it has veggies in it so it's not going to taste like Olive Garden or anything but it's pretty good and if you want a protein boost after a good work out, it will do that too, with little fat and calories. This recipe I got from a pharmacist that I used to work with.( Oh I miss and love her so...) I have been making it for about three years now and Erik and I love it. It goes great with a salad, more veggies, or whatever your little heart desires.

Turkey Burgers
1 lb of ground turkey
1 green bell pepper diced
1 red bell pepper diced
a handful of mushrooms diced
1 or 2 cloves of garlic diced (depending on how much you like or none at all if you wish)
half a bundle of green onions diced
salt and pepper to taste
a couple of teaspoons of soy sauce (eye ball it and decide how much you want)

I like to dice all the vegetables in my food processor. You definitely don't have to, you can just dice them by hand. However, don't add the green onions to the processor, just dice those separate. Mix all together with turkey and mold into patties. Bake at 350 for 35 minutes. Serve with teriyaki sauce drizzled on top. These are good and guilt free!! My fav!!!
If anyone tries these, you'll have to let me know!!

Just for fun!

I made this apron for my niece and I had so much fun. I can't say it's the cutest thing in the world but she liked it and I had fun doing it!!!

Do you ever........???

Lately, my mind has taken over any rational thoughts I once had. Everything I see is a project in my eyes. I often sit on the couch, looking around at each room in my house thinking, what can I do to it to make it cuter, funner, and more unique. Trust me, I have so many ideas and of course my pockets won't allow, but it has become an obsession. My mind is constantly thinking about some sort of project I want to do. Poor Erik has to listen to me whine about wanting money to do this, this and this. Bless his heart for loving me for me and all my craziness. For example, my kitchen needs some brick. Odd you say?? No, it will be so cute! Brick around my arches and under my cabinets as a black splash, so fun!! Not cheap! Ughh.........do you ever get this crazy????

Avery's new thing!!

So Avery's new thing to say is, "I need my......" and then she just adds something in the blank. For example, "I need my boots mama!" or "I need some orange juice." Everything is I need........ She is certainly growing up to be like me. I think I need everything lol. She cracks us up with her little demands. However, I fear for the teenage years of I need.........lol.

Target is not a good place for ADDICTS!!

So today was a little rough for me......I was at Target and I could hardly contain myself, I mean I wanted to just stop in the isle and cry a good one. There were so many wonderful things in that store and each one of them so desperately wanted to climb into my cart and ride home with me. In fact, I'm pretty sure I heard a few items call my name and ask to come home with me. Usually, my poverty doesn't get to me because I know it's for a good cause and after dental school, our circumstances will better allow me to take the orphan products I see at Target home with me but today...ugh! It really got to me. Now please excuse me while I drown my sorrow in a Diet Pepsi. Next time, I will be stronger and I won't have to bite my lip to hold back my compulsive desire for all the cute stuff! :)

Fire in the sky!!!!!

Not exactly but it looks like it though. Erik was leaving to go to work for a couple of hours one night and Avery and I usually walk him to the door to see him off. When we stepped outside, this is what we found. It was beautiful and in Las Vegas, rarely do you find anything beautiful. This however, is nature, this is God. I imagine there was a party in heaven and their celebration created something beautiful for us to look upon all while giving us something to look forward to.

A work of art?........

Okay hardly, but this is the quilt I've been working on for Avery's "big girl bed." That time is still a ways away but that's why I started now, so there would be tons of time for errors. I'm going to add a large border to it and I think I've decided not to have it quilted together. Instead, I think I will make it into a duvet cover. What do you think? Would that be lame or should I have it quilted? I love down comforters and I think it would be cute with the puffy down underneath. Need your input so feel free to lay it on me, even it is brutal honesty ;)

I'm loving this stage!!!!!!!

Tonight, Avery read me a story. No, of course she cannot read but she said, "I read mama!" And so she pointed to things, told me the color, what they were, what they say and what they were doing. I'm always amazed by what she knows. Not only did I get a wonderful story from the cutest two year old ever, but she also said the her night time prayer. She has done it the past couple of nights and yes she repeats what I tell her, but she loves it and she does an awesome job. This age is so fun. Every night when we tell her it's time for bed, she immediately says "snuggies!" and lays her head on one of our shoulders, hoping to get a few more moments out of the crib. She gets more clever as each day passes!!!

Merry Christmas update and photo over load!!

Christmas was excellent. This year, we decided to stay home and it was just the three of us. Christmas eve we spent time reading in our scriptures and taking Avery on a walk to look at all the Christmas lights in the neighborhood. I made home made cinnamon rolls and Erik and I played Santa after Avery went to sleep. The night was rough. She woke up four times then slept in till 9:30. Christmas started late for us :) We had a fun morning opening up presents and pretty much, we spent the day in our pajamas, watching movies, eating junk food and the Christmas ham I made for dinner. The next morning was kind of a shock. We we're heading to Richfield to visit Erik's family when we found out my dad had had a heart attack. We spent the next few days making our way to Colorado and then back home. My dad is doing great and we are so happy that he made it to the hospital in such a short time and they were able to take care of him. So without further ado, here is an overload of our holiday season!!!
Avery's first bath with a boy!!!
Erik's cozy socks I put in his stalking!
Avery's favorite thing ever, BOOKS!
Her cute new kitchen! After Erik put it together, we discovered the missing handle.
The company sent us a new one. Looks a little odd with that missing piece but oh well!

The awesome table my brother made for Aves!
We painted it and antiqued it! So cute and she loves it!

Setting things up and playing Santa Christmas Eve!

Avery loved Santa! I swear it's cause of her weird doll!
