Just pondering...........

Do you ever stop, take a look at your life and wonder, how did I get here? And not in a negative way but rather a curious one? Today, I did just that. Never did I picture myself 27, married to the best man ever, (seriously, when I married him, I don't even think I realized how perfect he is for me and how wonderful!) living in LAS VEGAS, a stay at home mom, one who is getting frustrated with the dynamics of adding to this family and someone who has changed so much over the years. My interests have changed as well as how I perceive myself. I used to live in the now and not worry so much about the future (sometimes I miss those days.) Now, all I seem to do is plan for the future and it gets exhausting. I wish I could just say forget it, I'll cross that bridge when I get there but my personality won't allow it and even though I wasn't the one who served a 2 year tour for the military, it changed who I am and my marriage. Was it for the worst? No, but who knows what things would have been like had that not occurred. Point is, it was meant to be and I wouldn't change it. However, I often wonder what things would be like had I not been so idle with my decisions. I could have accomplished more and I often wish I had. My life is good and I have always thought that. I am truly blessed but wow, things have changed over the years and when I was younger, I honestly didn't think much about the future. I think I thought I would be young and childless forever. The circle of life continues and sometimes I stop, look around and wonder how time went by so fast and how I am standing here now and it takes my breath away.

Girlies night out!!!

On Saturday, we had a girls night out and it was so much fun! We went to Dear John, and I have to say, it was a lot like watching parts of my life and beginning relationship with Erik but the plot, ugh.... not a fan. Anyway, I love these girls and I'm so glad I have moved here and became friends with these wonderful ladies. They probably have no idea but they are a huge blessing in my life. They make living in sin city bearable! Can't wait till next time!
As you can tell, I'm extremely excited for Eclipse!

The cutest little lady around!!

I just have to say how much I loooooooove this girl! She is so sweet and funny! Although she has her stinker moments, she is constantly cracking us up. She often says, "guess what mama?" Me:"What Avery?"
"I want to go to the park!" This conversation occurs at least a couple of times a day and always when it's dark outside. I have to explain that we don't go to the park when it's raining or it's dark outside. She is incredibly attached to her Mr. Bear aka Mr. Boo. She often asks for "nim a nims" aka m&ms and she loooves her daddy. Every other morning we are both lucky enough to wake up to him but if it's a day he's gone to school, she immediately asks "Where daddy go?" as she runs into the living room looking for him. I couldn't imagine life without motherhood! It is the greatest blessing of all and the best example of Christs love!

I guess she's gearing up for school. So soon?

If you're anything like me........

If you're anything like me and you are desperately trying to sneak more veggies in your diet, I have a recipe for you. Now, keep in mind it has veggies in it so it's not going to taste like Olive Garden or anything but it's pretty good and if you want a protein boost after a good work out, it will do that too, with little fat and calories. This recipe I got from a pharmacist that I used to work with.( Oh I miss and love her so...) I have been making it for about three years now and Erik and I love it. It goes great with a salad, more veggies, or whatever your little heart desires.

Turkey Burgers
1 lb of ground turkey
1 green bell pepper diced
1 red bell pepper diced
a handful of mushrooms diced
1 or 2 cloves of garlic diced (depending on how much you like or none at all if you wish)
half a bundle of green onions diced
salt and pepper to taste
a couple of teaspoons of soy sauce (eye ball it and decide how much you want)

I like to dice all the vegetables in my food processor. You definitely don't have to, you can just dice them by hand. However, don't add the green onions to the processor, just dice those separate. Mix all together with turkey and mold into patties. Bake at 350 for 35 minutes. Serve with teriyaki sauce drizzled on top. These are good and guilt free!! My fav!!!
If anyone tries these, you'll have to let me know!!
