Valentines day recipes by request

A couple of you wanted the recipes for the Cajun chicken Alfredo and the garlic cheddar biscuits I made on Valentines Day. Well here you go :)  Sorry it took me so long. Hope you make it and enjoy it!!!

Cajun Alfredo
8 ounces Cream cheese −− cut in bits
3/4 cup Parmesan cheese −− grated
1/2 cup Butter or margarine
1/2 cup Milk- If sauce seems too thick add more milk. Sometimes I have to.
Cajun seasoning to taste
For the chicken, pour some Cajun seasoning in a zip lock bag, dice your chicken toss in the bag and shake.
cook on stop top with a little butter. Add to your pasta when finished.

8 ounces linguine (that's what they use at Red Lobster but use what you like!); cook −− drain
In large saucepan combine cream cheese, Parmesan, butter and
milk, stirring constantly until smooth. Add Cajun seasoning. Taste as you add to decide how much you want to use. Toss pasta lightly with
sauce, coating well.

Cheddar Cheese Biscuits
Adapted from: Food and Whine
Yield: 12 large biscuits or 18 small ones

2 cups/250g all-purpose flour (unbleached or regular)
3 tsp. baking powder
1 tsp. salt
1/2 tsp. garlic powder
1/3 cup/75g butter, cold, cut into chunks
2 Tbsp. canola or any flavourless, odourless vegetable oil
1 heaping cup/ 6-7 oz. /150-170g grated cheddar cheese (sharp flavoured is best, I used extra sharp)
1/2 – 2/3 cup or 120-160ml milk (I didn’t need more than 1/2 a cup)
For brushing on top:
3 Tbsp. butter
1/2 tsp. garlic powder
1/2 tsp. dried parsley flakes or 1 Tbsp. fresh parsley, finely chopped
  1. In a large bowl, whisk together the flour, baking powder, salt and garlic powder.
  2. Add the cubed butter. Using a pastry cutter or a fork, cut butter into flour until it is coarse, pea-sized (doesn’t need to be fine).
  3. Add oil, grated cheddar cheese and the milk. Stir till well combined and holds together.
  4. Make sure to keep adding milk a bit at a time, just until the dough is moistened and you can no longer see any raw flour.
  5. Drop approximately 1/4 cup portions of the dough onto an un-greased cookie sheet or a Silpat using an ice cream scoop or large spoon.
  6. Bake for 15-17 minutes in a preheated oven at 400F/.
  7. While biscuits are baking, melt 3 tablespoons butter is a small bowl with 1/2 teaspoon garlic powder and the parsley.
  8. When biscuits come out of the oven, use a brush to spread this garlic butter over the tops of all the biscuits. Do this a few times – it’s fun to watch all the butter getting absorbed into the biscuit! Use up all of the butter. Serve warm.
I like to add a garden salad with this meal. Makes it complete and similar to Red Lobster! Let me know if you make it and what you think.

Erik's white coat and Konner's blessing!

We have had a busy week at our house but it sure was a fun one. We had family come into town to witness Erik's big step closer to becoming Dr. Foisy. He got his white coat, which is a fun way of welcoming those students into the profession. And on Sunday, we blessed our little man. Erik did such an amazing job. It was a beautiful blessing and Konner was calm through the whole thing. What can I say about this little guy, he is seriously the best! He is calm, sleeps like a champ, turns his head and goes right to sleep at night in his crib, he laughs, smiles and coos a lot, which I love and can't get enough of. In my opinion, our little ones are growing way too fast. We are seriously loving this little family we have created!

Just to scare you a little.....

Lately, my friends and I have had a lot of conversations about plastic surgery. Mainly because we have all had kids and let's face it, things just aren't where they used to be. Well, I have had a little something done myself. Yep, I had a nose job a few years back. Now, before you call me vain and such, let me explain. I had broken my nose when I was five and then probably one or two times after that. The bones in my nose were completely out of place and one side of my nostril's didn't even function. It was such a health hazard to not be able to breath that even my insurance paid for it. So without further ado, here is the hell that comes with that kind of surgery. They had to break my nose and remove some bones. It was a lovely experience. Um not!!! But it was worth it! I've never posted this before so enjoy. This first pic is right after surgery. It just got worse and worse after that. And, no comments about how skinny my face was. I only weighed 98 lbs at this time in my life. Erik was in Iraq, which made me sick to my stomach and the thought of this surgery made me sick for about a week before so I wasn't eating a whole lot. Ha ha, I will never be that skinny again!

 About a month after surgery!

Happy Valentines Day!!!

We had a great Valentines Day! Over the weekend we went out to dinner at Cafe' Rio and a movie, Just Go With It, with some friends of ours the Goddard's and even though we had Konner with us, it still felt like a night alone with our friends and we loved it. We don't get that very often.  Valentines morning, I woke up to a decorated table with flowers and cinnamon rolls from Great Harvest for breakfast. It was so awesome and Avery loved her valentine too. She calls every valentine she got a "Valentines Day!" So funny. For dinner that night, I too wanted to do something special so I decorated the table and made one of Erik's favorite meals from Red Lobster, Cajun chicken pasta, garlic cheddar biscuits, and salad. I had planned strawberry shortcake for dessert but we were all so full, we couldn't even get to it. I thought my pasta tasted almost exactly like Red Lobsters and the biscuits for sure did. I love my family and these are little ways that I can show them.
All I can say about this picture is of course. :)

Fun In Our Family!

Some fun in our family lately has been with our new fire pit. Erik got it for us for Christmas and this was the first time we used it. Our friends the Goddard's came over and we made smores and had hot chocolate and apple cider. I really love having this fire pit and Avery thought it was the coolest thing. Our backyard isn't really finished but this inspires us to get it done!

I love seeing Avery and Konner together. Of course Konner doesn't seem pleased but it melts my heart!
Avery was watching cartoons yesterday morning and I came into the living room to find this.
She told me she needed her princess crown to watch her cartoons. She is the funniest, sweetest girl.
We LOVE her so much!

Avery's tree of life!!!

Erik and I were strolling through baby's r us cause were on a hunt for a toy box for Konner's room, but we didn't have any luck. Instead, Erik stumbled upon this decal. He really liked it and it was his idea to get it for Avery's room. I love that he picked something out for her! He even mentioned that we should call it her tree of life so that she will always be reminded of the gospel. So cute! We then added some butterflies for the grand effect. Her room has been slow coming but that's how my decorating goes, slow. I kind of just wait until I find something I like and slowly things come together. Her room however, is starting to become a little cluttered so after this tree, I think one or two more things and it will be completed.
